Eustachius is a Medieval Latin name derived from the Greek Eustachys (εὔσταχυς), meaning "fruitful" or "good ear of corn" — ultimately from the elements eu ("good") and stachys ("ear of corn"). The name is closely related to Eustathius, another Greek name meaning "well-standing" or "stable," and both were used in Latin to refer to Saint Eustace, a legendary 2nd-century Roman martyr. In the saint's story, while hunting, he saw a crucifix between the antlers of a stag and converted to Christianity, undergoing many trials before being martyred by being roasted inside a bronze bull.
